Emulsification is the process of mixing two immiscible liquids, such as oil and water, to create a homogeneous dispersion of one substance in the other, forming a liquid-liquid dispersed system that remains relatively stable.

First, the type of emulsifier

The main types of emulsifiers are emulsion stirrers, homogenizers, and emulsion mills. Different types of emulsifiers achieve different emulsification effects.

Emulsion stirrers primarily rely on the mechanical energy provided by the stirring system to achieve the mixing effect. The resulting emulsion has poor dispersion, larger particles, and low stability. However, these types of equipment have a simple manufacturing process and are more affordable.

Homogenizers and emulsion mills both utilize high-speed rotating fixed rotor structures to deform and rupture the coarse liquid into fine droplets, resulting in emulsions with good dispersion and stability.

Second, emulsification time

The emulsification time can affect the quality of the emulsion. The duration of emulsification is determined based on the ratio of oil and water phases, the viscosity of the two phases, and the viscosity required for emulsion formation. Factors such as dosage, type of emulsifier, and emulsification temperature should also be considered.

Third, emulsification temperature

Emulsification temperature has a significant impact on the emulsification effect. It is usually determined by the melting point of high-melting substances in the oil and water phases, the solubility of the two phases, and the type of emulsifier used.

It is worth noting that the temperatures of the two phases should be brought to a similar state before mixing. For example, adding cold water to warmer wax oil would cause wax precipitation and result in a rough and uneven emulsion, greatly affecting the emulsification effect.

Fourth, stirring speed

Stirring speed also has an impact on the emulsification effect. If the stirring speed is too low, proper mixing cannot be achieved. On the other hand, high stirring speeds can lead to bubble formation, affecting the quality of the final product.

To maintain high-speed stirring without generating bubbles, the emulsification process should be conducted under vacuum conditions.
